London
distillery Bimber announces the launch
of Bimber González Byass Oloroso Sherry
Finish exclusively in Selfridges
department stores.
 Bimber Distillery in London has
announced its first retail partnership
with the forthcoming release of a
new single malt which will be
exclusively available from Selfridges
department store, the Bimber González
Byass Oloroso Sherry Finish.
The Bimber González Byass Oloroso Sherry
Finish was produced from the
distillery’s single farm barley and
malted on a dedicated floor at
Warminster Malting's, it was initially
matured in four 1st fill American oak
ex-bourbon casks before being married
together and finished in a single
Oloroso sherry butt from renowned
Spanish sherry producer González Byass.
The sherry butt, Cask No. 544-7/67,
produced a total of 937 bottles which
have been bottled at 52.5% ABV. The
presentation tube and bottle label is
adorned with artwork inspired by the
work of Dutch artist and sculptor Eelke
van Willegen and I notice that Bimber
has stated prominently on the bottle
label and presentation tube that the
whisky has been "FINISHED IN A 2010
VINTAGE OLOROSO SHERRY BUTT FROM
GONZÁLEZ BYASS", it also states that the
whisky was bottled in "JUNE 2020".
I
have to say I don't like the way this
info is presented to the buyer, I
believe that it could be misleading to
some buyers who may be under the
impression they are buying an older more
mature whisky than what they will find
in the bottle which considering that
Bimber only went into production in May
2016 the whisky can only be 3 to 4 year
old at the very most.
Bimber tells me that the result of the
sherry finishing is "an adventure
through richness and spice with layers
of jammy red berries and plump raisins
enlivened by delectable cinnamon and
nutmeg spices".
I have no doubt the the London whisky
will easily find buyers in the iconic
London department store Selfridges, if you are interested it will be
in stores from Monday 6th July with a
price tag of Ł79.99

Producer's Tasting Notes:
Nose: Bright, jammy red berries
sit with gingerbread and a slice of rich
fruit cake, whilst stewed apples and
pear juice are lifted by cinnamon and
nutmeg spices.
Taste: Velvety in texture with
pineapple cubes and sliced bananas
served alongside plump raisins, sultanas
and fig rolls. Vanilla cream is
enlivened by piquant pepperiness, stem
ginger and cinnamon sticks with a
perfect balance throughout.
Finish: Enduringly rich with
opulent fruitiness tempered by aromatic
oak.
