Review of the
new Dalmore 12 Year Old Sherry Cask
Select which has been finished in casks
which previously held a unique sherry
blend of aged Oloroso and Pedro Ximenez
sherry.
 The
Dalmore has unveiled a new addition to
their core range, The Dalmore 12 Year
Old Sherry Cask Select which will sit alongside the
current Dalmore 12 year old we are
already familiar with.
Continuing The Dalmore's affinity with
sherry the new Dalmore 12 Year Old
Sherry Cask Select spent its first 10
years maturing in American white oak
ex-bourbon casks and although the bottle
and packaging states that it was
finished in Oloroso sherry casks it was
a little more creative than that, the new
12 year old was finished in a
combination of American & European casks
from 3 different Andalucian cooperages (Tevasa,
Vasyma, Paez), each of which previously
held a unique sherry blend of aged
Oloroso and Pedro Ximénez sherry.
The new whisky is the work of Master
Distiller Richard Paterson, the creative
force behind The Dalmore for over fifty
years, Richard selected three cask
partners from Andalucia. Tevasa, Vasyma,
Paez. Together they curated oak casks and created a bespoke sherry
blend to season these casks in order to
realise the exact flavour profile
desired by Paterson.
Richard commented on his latest creation
saying: "The 12 Year Old Sherry Cask

and Pedro Ximénez sherry casks reveals a
more floral, light and refined side to
The Dalmore. It is a truly decadent

truly showcase the depth of The
Dalmore’s character."

Select has a RRP of £69 and it appears
to be exclusively available from

Morrison's Tasting Notes:
Nose:
Lovely fresh, clean, soft fruity notes -
aromatic orange fondant, raisins and
sultanas, a little sweet toffee, a hint
of honey and a very gentle distant
peppery spice.
Taste:
Delicious sweet sherried fruits lead -
juicy raisins and sultanas which are
quickly joined by some now slightly zesty
orange fondant,
apricot and mango, some creamy dark
chocolate and some sugared almond. A little
ginger and cinnamon
mix along with some pepper make a late
background appearance.
Finish:
The
juicy sweet sherried fruits slowly
bitters out to leave a little lingering
dark chocolate and coffee.
Comment:
I just loved the nose on this and I knew
something good was to follow on the
palate and I wasn't wrong as this really
is a deliciously juicy, quality,
sherried dram from start to finish but
you will have to dig a wee bit deeper in
your pockets for this one though as it
is £19 more expensive than the Dalmore
12 you are already familiar with but
this is bottled at the slightly higher
strength of 43% ABV.
