Fielden
Whisky reveals Hazybower, the second
release in the Fieldnotes Collection,
celebrating the flora of the English
countryside.

Fielden Whisky has introduced Hazybower,
the second release in its Fieldnotes
whisky collection – a vivid homage to
the wildflowers and herbs that naturally
thrive among the grains in England’s
rich, biodiverse landscapes.
Limited to just 1,000 individually
numbered bottles, Hazybower continues
the story that began with Hedgerow in
2024. This year’s expression is a fresh,
floral portrait of the English
countryside, capturing its vibrant
spirit in every sip.
A Whisky Rooted in Tradition and Nature
Hazybower is crafted from a distinctive
blend of heritage rye, wheat, and
barley, grown together as diverse field
crops, including the age-old maslin
method of cultivating rye and wheat side
by side. Fermented and distilled with
the grain in both pot and column stills,
the whisky is primarily matured in
re-used American oak casks—formerly home
to Fielden's signature rye whisky—to
preserve and highlight the pure grain
character.
To add depth and complexity, a portion
of the spirit has been fully matured in
a rare Hungarian oak Tokaji (sweet wine)
cask, enriching the whisky with delicate
honeyed, floral, and citrus notes
layered with warm spice.
Chapter Two of Fieldnotes: A Love Letter
to the Fields
Fieldnotes is a four-part exploration of
the flavour foundations behind Fielden's
rye whisky, with each chapter inspired
by an essential element of the field
ecosystem.
As the second chapter, Hazybower
celebrates the wildflowers, herbs, and
resilient plants—clover, poppies,
thistles, mayweed, and more—that coexist
in Fielden’s regeneratively farmed grain
fields.
The inaugural release, Hedgerow,
celebrated the richness of English
hedgerows, from fragrant blossoms to
berries and rosehips, rounded with hazel
and darker nut undertones.
Fielden's whiskymaker Chico Rosa
explains: “While conventional
agriculture often suppresses diversity,
we aim to champion it here at Fielden.
These plants aren’t just beautiful -
they contribute to healthy soils,
resilient crops and complex, layered
flavour. With Hazybower, we are bringing
that diversity into your glass via the
flavour and texture of this spirit. The
result is a whisky that evokes hazy
summer days in the English countryside -
freshly cut herbs, meadow flowers and
lemon tart in the evening sun. Balanced
by our signature spice of rye and a
mellow freshness, we hope that Hazybower
is both a sensory journey and a
statement of our regenerative farming
values worth sipping.”
Redefining Whisky from the Ground Up
Fielden believes that whisky is, at its
heart, an agricultural product. Instead
of industrial farming—heavy chemicals,
monocultures, and constant
ploughing—Fielden works with farmers
across England using regenerative
farming practices.
By planting diverse grains and using
clover as a natural fertiliser, avoiding
all chemical inputs, and minimising soil
disturbance, Fielden fosters healthy
soils, cleaner waters, thriving
biodiversity, and climate resilience.
This “No Chem Regen” approach reduces
the environmental footprint while
enhancing flavour and character.
The result? They tell me fields alive
with nature. Whisky alive with flavour.
