Every so often I try a single malt scotch which has a very bitter and unpleasant palate, regardless of a pleasant nose. Someone suggested smelling a lime just before tasting such a dram. Any other suggestions?

I cant say i have come across any malts that have been so bitter i couldnt drink them. Perhaps it is related to what you have been eating or drinking prior to drinking the whisky.

I try to cleanse the palate before the tasting but sometimes items eaten even hours earlier could perhaps affect the palate. I tried oatmeal cookies which are recommended to cleanse the palate but for me, it does not always work.

I can sometimes get a bitterness off a sherried whisky but on other occasions the same sherried whisky from the same bottle doesnt have the slightest bit of bitterness, so i just put it down to what i have been eating that day.

That makes a lot of sense to me. I think food eaten hours before can still make a difference.Probably even things like toothpaste and mouthwash earlier in the day can affect the palate at night.

Someone suggested trying lemon and a glass of some water to cleanse the palate before trying a new single malt. It seemed to work for me.
