St James is from Martinique and there is an AOC classification there, which states they are not allowed to add any sugar to their rum, it also specifies the brix levels (sugar content of the cane juice for fermentation). It's made from cane juice and not molasses and many of the rums from Martinique are aged in French oak (usually ex cognac casks). The result of this is they tend to be dry in style, not your sweet black blended rums from Guyana or Trinidad.

It's worth remembering that rum is a distilled spirit, no sugars pass through the distillation process. Just because it's made from sugar doesn't mean it's sweet, after all it's the sugars in malted barley that are fermented for single malt scotch and that's not sweet.

The only sugar in rum is stuff that's been added after distillation, during the maturation or bottling process Wink

Out of interest, how much is it? The sherry cask is £18 in Morrisons & I’m very tempted.
