|
|
I don't know if this has been asked before and I couldn't find any topic on it so here goes.
We all know that traditionally, whisky is matured in oak casks that were previously used to mature bourbon, rum, sherry, wine and port. I have never heard of maturing or finishing in brandy or cognac casks.
It seems to me, with the shortage of sherry casks, brandy/cognac would be the next obvious choice, as the flavour profile is more similar to sherry that something like wine or even rum.

Port Charlotte CC:01 is/was matured in Cognac casks
Glenlivet Captain's Reserve is finished in Cognac casks
Many 'french oak' whiskies will have been too. |

Ah, there are a few then. My point is, why is it not widespread as sherry drinking has declined but brandy IMO has not? |

I found this article which is from 2019 about relaxation of rules.

It would suggest that using cognac/brandy barrels would mean extra red tape for distillers and thus would probably put them off bothering up until a couple of years ago. |

That explains it I think. So we should be seeing it a used a whole lot more. Brandy and Armagnac has a lot to offer Scotch I feel. |
