Review of the
Kilchoman 100% Islay 13th Edition which
this year is a combination of 44
bourbon barrels.
Kilchoman
has announced the release of Kilchoman
100% Islay 13th Edition.
The 100% Islay 13th Edition was
distilled from Publican barley grown on
the farm at Kilchoman in 2012, 2013 and
2014, it was then matured for a minimum
of 8 years before 44 bourbon barrels
were selected to marry for this year’s
release of 100% Islay, so notably there
are no sherry casks in this years mix,
something we haven't seen in the the 10%
Islay releases for a few years.
Kilchoman Distillery is located on a
sprawling 3,000-acre farm nestled along
the north-west coast of Islay. The
majority of this expansive terrain
consists of rugged and unforgiving land,
suitable primarily for robust cattle and
sheep breeds. However, within this
expanse, there exists a precious
200-acre oasis of fertile soil that
encircles the distillery. It is here,
amidst this rich earth, that Kilchoman
cultivates the barley essential for
crafting their annual 100% Islay
editions.
The journey of their barley doesn't end
with cultivation; it continues within
the distillery's very heart. Once the
barley reaches maturity, the
distillery's skilled team takes charge
of the malting process using
time-honoured floor malting techniques.
They carefully nurture the barley,
allowing it to germinate and then
subject it to the smoky embrace of local
Islay peat. This peat-infused process
imparts the distinctive smoky character
that defines Kilchoman's whisky.
Each passing year, Anthony Wills, the
visionary Founder of Kilchoman,
meticulously handpicks a unique
combination of casks. In the current
year's selection, Anthony has chosen 44
bourbon barrels from three different age
groups, with the youngest barrels being
a vibrant 8 years old. The result of
this painstaking craftsmanship is the
Kilchoman 100% Islay 13th Edition,

Tasting Notes:
Nose: A
lovely clean, fresh
nose, vanilla and enticingly gentle
sweet peat smoke, a little mild zesty
lemon.
Taste: Sugared
charged, gentle lemon drizzled peat
smoke coats the palate, some vanilla
toffee accompanied by some
liquorice and oak spice.
Finish: Long, sweet
sugary peat
smoke is mellowed but outlives the vanilla, mildly
drying and lingering oak spice.
Comment:
This is all about the sugars, oak,
vanilla and peat as you would expect
from this years cask selection, another
cracking release from Islay's farm
distillery.
