Timorous
Beastie Highland Blended Malt introduces
the second instalment in its 'Cheese
Cellar Collection' with the unveiling of
the Madeira Finish Limited Edition.
 Douglas Laing & Co. has unveiled the
latest addition to its Timorous Beastie
'Cheese Cellar' Collection: the second
bottling. This unique series is said to
showcase the acclaimed Highland Blended
Malt, which undergoes a meticulous
selection of cask finishes, each chosen
for their distinct characteristics, all
in pursuit of discovering the perfect
flavour profile to complement artisan
cheeses.
For this release, the Highland Blended
Malt was carefully finished in Madeira
casks sourced from sun-soaked climates.
The result is described as offering "an
unparalleled depth of flavour and
complexity to the already formidable
spirit."
Douglas Laing tells me that the perfect
cheese pairing for this new release is
said to be "Gruyère due to the
complementary flavours, contrasting
textures and balanced intensity. The
whisky's notes of dried fruits and
caramel balances perfectly with the
nutty sweetness of the cheese, allowing
each element to shine without
overpowering the other."
Presented in the iconic tall black
bottle reminiscent of the initial
release, this new edition features the
signature mouse character in vibrant
green hues, accented with premium gold
foil finishing and a forest green wax
dip seal. Additionally, it includes a
deluxe foiled neck tag offering detailed
insights into the flavour profile and
the 'Cheese Cellar' collection.
Bottled at 48% ABV and with no added
colouring or chill-filtration, this
bottling upholds the Douglas Laing
family ethos of delivering Scotch Whisky
in its purest, most natural form.
