Douglas Laing
announce the release of Timorous Beastie
Port Edition, the inaugural
release in their new limited edition
'The Cheese Cellar Collection’ which has
been specially crafted to accompany
Artisan cheeses.
 Douglas
Laing & Co. introduces an exciting
addition to their renowned Timorous
Beastie brand with 'The Cheese Cellar
Collection.' This collection is said to
showcase the award-winning Highland
Blended Malt, which undergoes an
extended finishing period in unique
casks sourced from prestigious wine
regions around the world. Carefully
selected for their complex layers and
distinctive characteristics, these casks
have been expertly chosen to create the
ultimate flavour profile that
complements artisan cheeses.
To mark the launch of this special
collection, Douglas Laing unveils the
limited edition Timorous Beastie 'Port
Edition.' This Highland Malt is finished
in some of the finest Port Casks
available, resulting in an enhanced
depth of complexity. Douglas Laing tells
me that the influence of the Port casks
is immediately noticeable, showcasing
luscious juicy fruits, allspice, and a
delightful cocoa sweetness. They say
that the perfect cheese pairing for this
release is Stilton, known for its rich,
intense flavour and semisoft creamy
texture. The savoury elements of the
cheese are said to beautifully
complement the sweet, fruity, and spicy
characteristics of this expression.
The Timorous Beastie 'Port Edition' is
presented in a distinctively shaped
black bottle, featuring a burgundy wax
dip seal, reminiscent of a traditional
Port bottle with a bold and beastly
twist. The label showcases the signature
mouse character alongside premium gold
foil accents. It has been bottled at a
robust 48% ABV and without the addition
of colouring or chill-filtration,
staying true to the Douglas Laing
family's philosophy of providing Scotch
Whisky in its most natural form.

The Timorous Beastie 'Port Edition is a
limited release of 4,200 bottles with a
